Gastronomy & ingredients' passion

Cooking the ingredients we love, loving the cooking we make, to have it discovered by our guests and share with them our passion for the pleasures of the table, as so aptly Brillat Savarin, Prince of gastronomes, "is of all ages, all conditions, in all countries and every day; he joins all the other pleasures and is their last to console us for their loss "!

I love the cuisine of my Chef Hugo LORDIAN FOMBONNE, when he prepares dishes containing the market classics like calf's head in Gribiche sauce; I also like its more sophisticated but still very tasty dishes such as seared, foie gras from the Pountun farm, including one that he had served accompanied by a reduction scented with raspberry vinegar.
We like to go with him to meet the farmer in Orange that provides us with poultry, our cheese, MOF, which refines itself, our truffles provider,, in winter when fetching our snails with a local provider that raises them himself, our butcher who patiently made his stale meat, and all other, fans of good food and good French living. We  also discover and rediscover with our friends the winemakers of superb wines in wich they put so much love and know-how to produce.

Native from Camargue, Hugo was quiclky attracted by kitchen thanks to his family.
Hugo has gain, during his scolarship, an international vision of cooking thanks to different experiences in UK and Spain. THis experiences helped him to learn different ways and technic which help him in his cooking.
He took experience from our previous Chef Nicolas JAY during 5 years by growing close to him. Nicolas JAY has learnt to him a savoir faire and cooking knowledges.

Our Chef, Hugo Loridan is a Disciple d'Escoffier. He also participated to different contests such has "Jeune Talents Maitres Restaurateurs"  also "Jeunes Talents Disciples d'Escoffiers" and recently "Rencontres Gourmandes" on which he makes a different by finishing on the top.

At the heart of the vineyards of Châteauneuf-du-Pape, our cellar offers the best references  in wine from this region.  More than 50 areas of Châteauneuf-du-Pape are represented, nearly 800 references are included. You will also find some beautiful bottles of our neighboring appellations, Gigondas, Vacqueyras, Lirac etc. and less close such as Condrieu,  Côtes Rôties, Saint Joseph, Hermitage etc. We also have some great references in Burgundy wines and other regions of France.
Remember to ask for our Sommelier who will direct you to what wine will best accompany  the dishes you have chosen.
